North by Northwest Couscous Salad is a light and fresh with pearl couscous, fresh apricots, sweet currants and toasty hazelnuts. It's a versatile salad and is a great base for swapping ingredients. Use any nut, use carrot greens instead of parsley or perhaps plums instead of apricots. This salad is your creative palate! The dressing is a subtle lemon and olive oil base and the dish keeps really well for many days worth of happy lunches. Enjoy!!

This simple dish of roasted beets and quinoa is packed with good-for-you ingredients, plus it will give you a power boost of protein and iron. Quinoa is one of the most protein-rich foods we can eat, and if you're cutting back on or eliminating meat from your diet then swap in more of this delicious grain. This dish is excellent served as a side or in a salad. We love it on a bed of lightly dressed arugula! Enjoy!!

In the month of January, we’re taking 100 percent responsibility for our lives and our happiness. This week we’re challenged to bring that principle to our careers and the workplace. Are you happy with what you do at work? Do you bring a passion to the workplace? Are you satisfied with your career choice? Are you financially satisfied with where you are in your company? If you answered “no,” to any of these, it might be time for a change. That doesn’t necessarily mean you have to go and quit your job or close your business. It just means it’s time to think of ways to bring more fulfillment into what you do. Create a passion, so to speak. If you must be at work for eight to ten hours a day, you may as well love what you do. Much like with your spouses or significant others, your career is like a marriage.
